Ingredients:
For Bhaji-
- 2 cups cabbage finely chopped
- 1 cup carrot finely chopped
- 1 cup beans finely chopped
- 1 cup cauliflower finely chopped
- 1 cup green bell pepper chopped into small cubes (capsicum)
- 2 medium sized potato boiled,peeled and mashed
- 3 cups water for boiling the veggies
- 2 big sized onion roughly chopped
- 1 big sized tomato roughly chopped
- 3-4 green chillies roughly chopped
- 3 cloves of garlic roughly chopped (if cloves are small then take 5 cloves)
- 1 tbsp ginger roughly chopped
- 4 tbsp refined oil
- 3 tbsp pav bhaji masala.(you can increase the bhaji masala if you need more spicy) (Everest,MDH etc)
- 1 tbsp kashmiri red chili powder (it only gives good color but do not increase the heat level)
- Salt to taste
- 1 tsp turmeric powder
- 2 tsp red chili powder (you can adjust it according to taste)
- 2 tbsp butter
Other-
- Pavs for serving with the bhaji
- Butter for smearing on the pavs and for serving
- Thinly sliced onion
- Few lemon wedges
- Few green chillies
- 1/4 cup finely chopped coriander for garnishing.
Procedure:
Get all the ingredients ready.
In a pressure cooker combine chopped cabbage,carrots,beans and cauliflower.Add 3 cups water and 1 tsp salt,pressure cook it at least for 15-20 minutes or till 3-4 whistles.Open it only when the pressure escapes naturally on its own.
Take onions,tomatoes,green chillies,garlic and ginger in a blender jar and blend it to a smooth paste using water as required.
Take oil in a deep kadhai/pan and put it on medium heat.
When oil is hot enough, add pav bhaji masala and kashmiri red chilli powder in it and stir it quickly.Now turn the gas on low so that the masala do not get burn.Saute it for about 30 seconds.This gives a good flavor and color to bhaji.
Now add the onion,tomato,ginger, garlic and green chilli paste prepared above in the masala and mix it nicely.While adding the paste be a little careful as it can splutter.
Add salt,turmeric powder and red chilli powder in it and stir nicely.Now cover and cook the masala till it is half done.Keep the gas on medium heat.Keep stirring in between so that it does not stick to the bottom of the kadhai.
Cover and cook till the masala is half way cooked.It takes around 15 minutes.When masala is half way cooked then it will look like the second picture shown above.
Now add chopped capsicum in it and mix it nicely. Again cover it and cook till the masala starts leaving oil from the sides.Keep the gas on medium heat.
Above pictures shows the different stages of masala while cooking.When masala is cooked properly then it will look like the second picture shown above.
When masala is cooked properly then add mashed boiled potatoes in it and mix nicely.
Now add boiled vegetables along with its water in it and mix nicely so that all the masala is mixed properly with the vegetables and mashed potatoes. Smash the vegetables little bit with the back of the spoon while mixing in order to get bhaji like consistency.
Let the bhaji simmer on medium heat for about 15 minutes so that all the flavors in masala infuses with the vegetables and the extra water evaporates and make the bhaji thick.Keep stirring in between so that it does not stick to the bottom of the kadhai. Do not cover the kadhai. You can taste and adjust salt at this stage.
Now when the bhaji has become little thick, add 2 tbsp butter in it and mix nicely.Let it simmer for another 10 minutes and finger licking bhaji is ready to be enjoyed with pavs.
For serving smear butter on pavs nicely and toast it on hot tava till they are crispy.Take out bhaji on a bowl,garnish it with some coriander leaves and a dollop of butter.Now serve this scrumptious bhaji with hot pavs and some onion,lime wedges and green chillies. Handy Tip:
After cooking bhaji if you feel that it is not that spicy or pav bhaji masala is less then do not add the masala directly.It gives a raw masala taste to it.Just melt 1 tbsp butter in another pan and add pav bhaji masala to it.Saute it for some seconds and then add it to the bhaji.Your bhaji will become perfect.
You can apply this trick when you want to take out some less spicy bhaji for kids and then add more bhaji masala for adults.
