Today I am going to post recipe for semolina pancakes.It is a super easy recipe which you can make any time.My mom used to make this for me and I used to love it .I am going to tell two methods of making pancakes in this recipe. You can use any method as per your convenience.Please do try this and let me know how you like it.
Servings: Depends upon the size of pancakes
Cooking Time: 45 minutes(excluding the fermenting time)
Ingredients:
- 2 cups fine semolina(suji/rawa)
- 1 cup plain curd/yogurt
- 2 cups water
- 2 tsp salt
- 1/2 cup tomato finely chopped
- 1/2 cup onion finely chopped
- 3-4 green chillies finely chopped (you can adjust it according to taste)(optional)
- 1/4 cup coriander finely chopped
- Refined oil for cooking the pan cakes
Procedure:
Take 2 cups semolina/suji in a deep bowl. (I used fine semolina,you can use any as per availability)
Add 1 cup plain curd/yogurt to the semolina/suji.
Mix the curd nicely with the semolina.The batter will be very thick,add 1 cup water and 2 tsp salt in it and stir nicely.Now cover the bowl and keep it in a warm place to ferment the batter for at least 2 hours.
After 2 hours you will see the batter has been fermented nicely and have become more thick.Add some more water in the batter and stir nicely to bring it to dropping consistency.(The consistency of batter is like what we make for dosa/uttapam).Now heat a non stick pan/tawa and sprinkle some water on it (it should sizzle immediately),wipe off using a piece of clean cloth.The pan/tawa is ready for making pancakes.
FIRST METHOD :
Pour 1/4 cup of batter on tava and spread it in a circular motion to make 5″-6″ diameter circle.Then add around 1 tsp oil in the corners of the pancakes, add oil around whole circumference of pancake.
Now sprinkle some tomato,onion,green chillies and coriander evenly over it and let it cook from bottom side.Keep the gas on medium heat.If you increase the heat then it will cook fast but the inside can remain raw and it will not be crunchy also.
Let it cook completely from one side,after 4-5 minutes with the help of flat spatula turn it over to the other side and cook it by adding some more oil if needed.If you use non stick pan or tawa then you can make one pan cake with less than 1 tsp oil.When the pancake is cooked properly from both the sides then take it out on a plate.
SECOND METHOD :
In this method we will mix the veggies in the batter and mix nicely.
Now pour 1/4 cup batter in hot tawa/pan and spread it a little bit,it will not spread much as the batter is thick due to veggies.Keep the gas on medium heat.Then add around 1 tsp oil in the corners of the pancakes, add oil around whole circumference of pancake.
Let it cook completely from one side,after 4-5 minutes with the help of flat spatula turn it over to the other side and cook it by adding some more oil if needed.When the pan cake is cooked properly from both the sides then take it out in a plate.
Like this make pan cakes with rest of the batter.You can make pancakes with any of the two method you like.Serve it hot with tomato ketchup or coriander peanut chutney or chana daal chutney or any sauce of your choice.This is also a perfect tiffin box lunch for kids.It tastes good even when it is cold.Do try this and let me know how you like it.Enjoy !!
