Litti Chokha (From the Streets of Bihar)

Hello Friends,

Today i am posting recipe for litti choka. It is a traditional dish from bihar. and is very delicious. Traditionally it is baked in hot charcoal or cow dung cakes lit fire, and then we put the raw litti balls on these hot embers to cook / roast or it is made in a barbecue grill in which charcoal is used and it taste awesome with the smoky flavors of woods or charcoal. Nowadays all these traditional methods are not so easily available so we will make them in oven or gas tandoor which is available is every household. This dish takes a little time but believe me its worth the effort. So please try this recipe and pamper your taste buds with the flavors of bihar !!

Servings: 14 -15 Littis (Depending upon size)

Prepration & Cooking Time: 1 – 2 hours

Ingredients:

For Litti dough-

  • 3 cups whole wheat flour
  • 4 tbsp ghee
  • 1 tsp baking powder
  • 2 tsp Salt
  • Warm water for kneading the dough

For Sattu filing-

  • 1.5 cups sattu
  • 1 cup onion finely chopped
  • 3-4 green chilies finely chopped (you can adjust it according to taste)
  • 1 tbsp garlic finely minced
  • 1 tbsp ginger finely grated
  • Salt to taste
  • 1 tsp red chilli powder (you can adjust it according to taste)
  • 1 tsp roasted cumin powder
  • 1 tbsp mustard oil
  • 1 tbsp lime juice
  • Water for mixing the ingredients

For Choka-

  • 2 medium sized tomato
  • 2 large potato
  • 1 medium sized brinjal (eggplant, baigan)
  • 1 cup onion chopped
  • 2-3 green chillies (you can adjust it according to taste)
  • 1/4 cup coriander finely chopped
  • Salt to taste
  • 1 tsp red chilli powder (you can adjust it according to taste)
  • 1 tbsp kashmiri red chilli powder (used for giving nicely color , it does not increase the heat level in the choka) (MDH,Everest)
  • 1 tsp roasted cumin powder

Other:

  • Ghee to dip the litti before serving

Procedure:

Step 1: We will make dough for Litti. Take whole wheat flour in a deep bowl,add salt and baking powder to it. Warm ghee a little bit and add to the flour. Now with your hands mix the ghee and flour nicely,it will become little crumbly. This is the right texture of the flour mixture which is used to make litti. If you are not getting this texture after mixing properly then add 1 tbsp ghee more.Then using little water knead the flour into stiff dough. You do not need to make it very stiff dough,semi stiff will work well.Then cover the dough and keep it aside for at least 20 minutes.

Step 2: Now we will make choka. For this boil the potatoes and roast the tomatoes and eggplant. You can roast it either on open flame in gas or in the oven. Apply little oil before roasting as this helps in peeling the skin easily. When the tomatoes and eggplant is roasted then let it cool for some time so that it is easy to handle. Peel the skin of tomatoes and eggplant and clean it properly.Then take the potatoes,tomatoes and eggplant in a deep bowl and mash it with hands or with the help of potato masher.When it is mashed properly then add onion,green chilies,coriander,salt,red chilli powder,cumin powder,kashmiri red chili powder and mix nicely so that all the spices are incorporated nicely with the veggies.The super yummy choka is ready to accompany the litti.

Step 3: Now we will proceed with making sattu filing for the litti. In a bowl combine sattu,onion,green chilies,garlic,ginger,salt,red chilli powder,cumin powder,mustard oil and lemon juice.Then with the help of little water mix it.We have combine it to the level that it remains little crumbly.We do not need to make it like a paste or dough.You can get the clear idea with the pictures that I have posted below:

Step 4: Our sattu filing is now ready,we will now proceed with making litti. We will now divide the dough by making  balls of equal sizes.Approximately the size of ball which we make for chapati.Now with  your thumbs press the ball to enlarge it and make like a small bowl,then fill it with around 2 tbsp sattu filing. Then taking the dough from all the sides close the ends and seal it properly. Like this fill the remaining dough balls and keep it upside down on the baking tray.I baked it in oven,you can also bake it in gas tandoor.

Step 5: Pre heat the oven at 180 degree celsius or 350 degree fahrenheit for 5 minutes and then bake it. It takes around 30-35 minutes to bake nicely. Do not increase the temperature,otherwise it will remain raw from inside.Keep turning the littis in every 10 minutes so that it bakes from all sides and cooks evenly. Like wise you can also make on gas tandoor, it is the same procedure. Preheat the tandoor a little bit and then brush the tandoor surface with little oil so that litti do not stick to the surface,then place the litti over it and close the lid.Keep checking in between and rotate it for uniform baking.

Super Scrumptious litti is ready. Now warm some ghee in a pan and dip the litti in it and then serve with choka,coriander chutney and garlic chutney. Please try this and let me know how you like it.Enjoy !!
